Mamu’s Special Salad

This recipe has been a favorite of our families for about 30 years. Use Cara Maria artichoke hearts and Dried ,not fresh Parmesan cheese, I,ve tried it and it doesn’t work.

Per small jar of artichoke hearts;
1 egg yolk
1 tsp Dijon mustard
1 tsp garlic salt
1/4 cup olive oil
oil from Artichokes
1 tsp lemon juice
Dried Parmesan Cheese, enough to thicken ( Note don’t make it too thick, this will thicken quite a bit when it is refrigerated.
1 head of Romaine lettuce
chopped artichoke hearts

Tear lettuce into bit sized pieces, be sure the lettuce is dry. Combine all ingredients for dressing. Refrigerate dressing. When ready to serve, add artichoke pieces, crutons and toss with dressing.
